“This particular ratio is incredibly daring,” head barista Hugo Fan says. “It’s a combination rarely attempted in the industry. To bring our vision to life, we collaborated with an award-winning roasting team to precisely calibrate every detail, ensuring our bespoke flavour profile is perfectly captured in every cup.”
For those seeking a brighter awakening, the Fruity Espresso offers an even more distinctive flavour. This vibrant blend pairs 60 percent Ethiopia coffee beans with 40 percent coffee beans from Colombia’s famed Finca Milan – a plantation celebrated for its multi-award-winning crops. A delicate medium roast beautifully preserves the beans’ natural, original flavours. With your first sip, a refreshing burst of sweet melon unfolds on the palate, followed by the lush, rounded notes of ripe white peach, achieving a harmony of acidity and sweetness.
These two espresso blends come with a premium quality, standing out as some of the finest coffee found across all Sands China restaurants. The team dedicated a full year to perfecting the roast and ratio, resulting in the formula served today. “We completely looked past the cost,” Fan emphasises. “For us, it was entirely about uncompromising quality and achieving the ultimate standard.”

The hand-brewed single-origin coffees at Churchill’s Cabinet are also exceptional. To cater to every palate, Fan reveals that the passionate culinary team meticulously blind-tasted their way through 60 varieties from over a dozen top-tier suppliers before carefully curating a final lineup of six standout beans. Alongside approachable crowd-pleasers like classical selections from Yunnan, Brazil, and Ethiopia, the menu features rare gems, including an Ethiopia Sidamo and a Colombia Risaralda Finca La Rivera.
Among them, Fan shines a special spotlight on the Panama Hacienda Bárbara Lot 24. “This exquisite bean undergoes an anaerobic natural processing method that beautifully amplifies its intense rose, red plum, and red grape notes,” he says. “It’s a truly premium specialty coffee with an iconic, unforgettable flavour profile.”
To complement this diverse collection of beans, the cafe offers a choice of five distinct brewing methods – each designed to coax unique aromas and textures from your chosen roast. Guests craving a clean, light-bodied cup can opt for a classic pour-over, while those preferring a richer mouthfeel can choose the Chemex.
