There are few better guides to a city’s bars than someone who runs one elsewhere. Frankie, co-founder of Two Moons Macau, spent an evening showing us where he drinks in Zhuhai.
First stop is CODA, one of his favourites – cosy, and built for a friend and one or two drinks late in the evening rather than a big night. He works through three: Summer, a kombucha-based cocktail along gin fizz lines, all gentle acidity; a rose tea drink lifted by kumquat and balanced with pear brandy, which he calls “super easy-going and silky”; and a soju infused with white truffle, crisp and, he notes approvingly, not too heavy on the truffle.
Then to Kam Chia Bistro, a Taiwanese kitchen in a room he describes as “super old school”. A cold dish of marinated smoked pork and chicken arrives for picking at over early drinks, followed by a Taiwan liquid pineapple cake cocktail that finishes on pineapple jam, and another built on traditional Taiwanese black tea, its sweetness cut with citrus.
